Every year for Christmas I get at least one cookbook and I usually read through it as soon as I possibly can. This year my husband gave me the new America's Test Kitchen cookbook, and I immediately fell in love with the Lighter Tamale Pie in the vegetarian section. I had already planned to make it at some point in early January, and once I found out we would be having a vegetarian house guest this past weekend, decided it would be the perfect dinner.

Turkey Meatball and Radicchio Soup
This soup isn't necessarily the prettiest, but it tastes great and even my husband, who isn't a huge fan of soups for a meal, finds this one filling and satisfying for a lunch. This recipe is a little time consuming because of the meatballs, but it's keeps well in the fridge and freezes beautifully. I usually freeze in individual portions so that we can just grab a serving and defrost at work for lunch.

Happy New Year
It's a start of the new year, and I have been increasingly interested in eating responsibly, ethically, and healthily, especially because my 17 month old son eats what I eat and I also need to be able to keep up with him. So I've recommitted to Weight Watchers and focused on whole and unprocessed foods, and the family is on board. The first recipe for this site might just be the oddest, and it is one that is just for me - Spinach and Soy Oatmeal.
